After a long search for the perfect oatmeal cookies for my five year old, my next door neighbor came to the rescue. Not too doughy, not too crispy, just right. These have become a favorite in our house and they are quick and easy to make.

Preheat oven to 375 degrees F. Lightly grease cookie sheets (or use Silpat). Cream together butter and sugars. Add egg and vanilla, beat until mixed.
Combine flour, baking soda, cinnamon, nutmeg and salt in a separate bowl. Add slowly to the creamed butter mixture.
Add rolled oats and nuts if using.
Drop by tablespoonfuls onto greased cookie sheet. Place in preheated oven for 8-12 minutes or until lightly browned.
Yields: 4 dozen+ cookies.

These were very, very yummy. I put in one egg, as “adorkable” suggested and it seemed to work fine. But I only put a little over 2 cups of oats. After I put the second cup in, there were so many oats they couldn’t blend into the batter anymore. But overall I would definitely make these again.

I have this recipe and I lOVE it! Just fyi though, I think you forgot to list the egg (though you mention it in the instructions.)

This is nearly identical to my oatmeal cookie recipe; my only variation is to use maple flavoring in place of the vanilla, yum!
