Description

Amazing oatmeal raisin cookies! I add pecans and chocolate chips for a little decadence. Despite the chewy, gooey, deliciousness of these cookies, the best part is that each cookie is about 30 calories! So, when you want to eat 10 … well, go ahead!

Ingredients

  • ⅓ cups Granulated Sugar
  • ¼ cups Brown Sugar
  • 3 Tablespoons Canola Oil
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • ⅓ cups All-purpose Flour
  • ½ teaspoons Baking Soda
  • 1-½ teaspoon Ground Cinnamon
  • ⅛ teaspoons Salt
  • 1-¼ cup Old Fashioned Oats
  • 1 cup Raisins
  • Chocolate Chips (optional)
  • Pecans (optional)

Preparation

Preheat oven to 375 degrees.

Mix the first three ingredients (sugars and oil) until well blended. Add the egg and vanilla and mix until incorporated. Add flour, soda, cinnamon, and salt. Mix well. Stir in the oats and raisins. Add chocolate chips and pecans if you want. Or add Craisins, white chocolate morsels, walnuts, or any other additions you like.

Line two baking sheets with parchment paper. Spoon mixture by spoonfuls onto sheets, about 20-25 per sheet. Cookies will seem incoherent, but don’t worry.

Bake for 5-6 minutes until SLIGHTLY golden. DO NOT BAKE LONGER. Maybe an extra minute here and there, but not too long. Cookies will NOT look done when taken out.

Take out of the oven and allow to cool for 3-5 minutes. Move the parchment paper to wire racks to cool completely, another 5 minutes. Peel the cookies off the paper and onto wire racks until you have polished them all off.

These are great snack time cookies or a nice dessert that won’t bust your belt or ruin your diet.
