An adaptation of the famous Neiman Marcus chocolate chip cookie with cinnamon and peanuts.
Preheat oven to 325ºF.
Cream the butter and both sugars until light and fluffy. Beat in the egg and vanilla until incorporated.
In a separate bowl, sift together and mix the dry ingredients. Beat slowly into the liquid mixture until just incorporated. Fold in the chocolate chips and peanuts.
Using a cookie dough scoop or spoon, place cookie dough onto a lightly greased baking sheet.
Bake cookies for approximately 15 minutes until lightly browned around the edges.
