These are the cookies my mom and I make every year at Christmas. They are one of the best tasting sugar cookies I’ve tasted, but then, I’m biased.
Sift together into a bowl and reserve the flour, baking soda and salt. In a separate bowl, cream the butter, sugar, eggs and vanilla. Beat with mixer or wooden spoon until mixture is light and fluffy. Add in flour mixture until smooth. Chill for 1 hour. Roll a small amount of dough at a time on floured board to 1/8 to 1/4 inch thick. Keep remaining dough in refrigerator. Cut into shapes with cookies cutters. Put on parchment lined cookie sheets and bake 8 – 10 minutes at 350 degrees. Adjust time depending on crispiness of cookie desired. Decorate with colored sugars or ice after cooled. Makes 4 dozen
