Chocolate and zucchini never tasted so good!
Preheat oven to 325°F.
In a stand mixer or large bowl, beat together oil, eggs and sugar. Mix in vanilla and grated zucchini.
In a medium bowl, whisk together salt, baking soda, baking powder, cinnamon, flour and cocoa powder. Blend just until ingredients are well incorporated. Fold in chocolate chips.
With cooking spray, lightly spray 2 standard loaf pans. Divide batter evenly (about 4 cups each) between pans. Bake for 60-70 minutes or until an inserted toothpick in the center comes out clean. Let the loaves cool in pan for 20 minutes, run a knife around the edges, then remove to complete cooling on a wire rack.
