This is one of my go-to cookies on a cookie tray for holidays or special occasions. They’re quick, easy, and SO good! I liken them to a Mexican Wedding Cookie, only chocolate. Add some chocolate chips to bump up the flavor even more, then dress it up with a confectioners’ sugar/cocoa coating. Present them in mini muffin paper liners to dress them up even more.
Heat oven to 375 degrees. Lightly grease cookie sheets.
In a large bowl, beat confectioners’ sugar and butter until light and fluffy. Add vanilla and unsweetened chocolate; blend well. At low speed, blend in flour and salt. By hand, stir in chocolate chips.
Shape into 1″ balls; place on prepared cookie sheets. Bake at 375 degrees for 10-12 minutes. Cool completely.
In a small bowl, combine the ingredients for dusting. Roll cooled cookies in cocoa dusting mixture. Makes 4 dozen cookies.
Note: for a pretty presentation, place cookies in paper candy cups.
