These are a easy, light snack for any time of the day.
Break graham crackers in half. Mix powdered sugar, cocoa and milk until it has a frosting consistency. You might need more or less milk for this. (I sometimes put 1/2 cup cocoa to make it a darker chocolate.) Spread on one side of the graham cracker, put the other half on top to make a sandwich and let frosting set up. This takes just a few minutes. My children like them frozen.

I haven’t thought of these in years! We used to make them as kids and freeze them. We never made chocolate, -just a plain powdered sugar icing that we would tint pink or green. I always thought they were best when frozen because the graham cracker softens slightly and sort of reminded me of an ice cream sandwich. Thanks for the sweet reminder!
