Description

Chocolate and peppermint are two of my all-time favorite flavor combinations, and it seems like the holidays are just the perfect time for these. These cookies were easy and tasty and a new favorite at my house. The family ate them in record time!

Ingredients

  • 1-½ cup Semi-sweet Chocolate Chips, Divided
  • 1-¼ cup Flour
  • ¾ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ½ cups Unsalted Butter, Softened At Room Temperature
  • ½ cups Packed Brown Sugar
  • ¼ cups Granulated Sugar
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 24 whole White Chocolate Peppermint Hershey's Kisses, Unwrapped

Preparation

Preheat oven to 350ºF.

Put 3/4 cup of the semi sweet chocolate chips in a microwave safe bowl and microwave for approximately 1 minute until they are melted.

Combine flour, baking soda and salt in a small bowl, set aside.

Beat butter, brown sugar, granulated sugar and vanilla in a mixing bowl until creamy. Beat in melted chocolate and egg. Gradually add the flour mixture and beat until creamy. Stir in remaining 3/4 cup of chocolate chips.

Using a cookie scoop (1 tablespoon size) place dough on an un-greased baking sheet. Bake 10 minutes. Remove from oven and let cookies cool for 1 minute. Press a Kiss into the top of each cookie. Cool cookies completely on a wire rack.

Makes 2 dozen.
