Minty chocolate cookies with peppermint candy bits. Chewy and oh-so-yummy!
1. Preheat the oven to 350 degrees F.
2. Cream together the butter and sugars until will blended and light in color.
3. Add the egg and the peppermint extract until will blended. (Scrape down the bowl halfway through.)
4. Whisk together the flour, baking soda, baking powder, salt and cocoa powder. Add to the butter mixture slowly and stop once all of it is incorporated (do not over-mix!).
5. Stir in the candy pieces and white chocolate chips.
6. Using a small (1″) scoop, drop dough onto a baking sheet lined with parchment paper. Bake for about 10 minutes (cookies should still look a little shiny, or ‘damp’). Let cool on the pan for a few minutes, and then transfer to a rack to cool completely.
7. Place immediately into Tupperware, and store in the freezer!

I am a novice baker – this was a very easy recipe and they taste delicious! Yes, the batter was very stiff, but I found that made it easier to scoop even portions. My new favorite cookie!!!

The batter was very stiff and not very chocolately – will have to play around with it and see if I can find the taste I am looking for!

I just made these and they are the best chocolate cookies I’ve ever made! I was looking for a recipe that turned out like Panera Bread’s Chocolate cookie and these are just like them. I didn’t actually make them peppermint…I substituted vanilla and chocolate chips for the peppermint flavoring and crushed peppermints. I’m sure they are great like that too! But as the base, it is a great recipe. Thanks Annalise!
