Description

Oatmeal raisin cookies with cocoa powder to give them a slightly more sinful twist (but not many more calories)!

Ingredients

  • ¾ cups All-purpose Flour
  • 2 Tablespoons Plus 2 Teaspoons Cocoa Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • ½ cups Salted Butter, Softened
  • ½ cups Packed Dark Brown Sugar
  • ¼ cups White Sugar
  • 1 whole Egg
  • ½ teaspoons Vanilla Extract
  • 1-½ cup Rolled Oats
  • ½ cups Raisins

Preparation

1) Preheat oven to 350.

2) Combine flour, cocoa powder (note: it’s 2 Tablespoons AND 2 teaspoons of cocoa powder, that’s not a typo!), baking soda, and salt in a medium bowl.

3) In a large bowl, beat softened butter and sugars until creamy. Add egg and vanilla extract; beat well.

4) Add the flour mixture to the large bowl of creamed sugars and mix well. Stir in oats and raisins; mix well.

5) Drop cookies by rounded tablespoonful onto an ungreased cookie sheet. Bake 10 to 12 minutes at 350F, do not overbake.

6) Cool cookies on baking sheet 1 minute before transferring to a wire rack to cool completely.

This recipe doubles or triples really easily. The good news is it’s not bad for you. Only about 100 calories per cookie, with 4g of fat, and 15g of carbs! (1g of fiber so that’s 14g net carbs… right?)
