No more boring sugar cookies for your next holiday swap! Chocolate Mint Cookies make Christmas cookies more fun and tasty!
Place a medium pan on medium-low heat. Add butter to the pan and allow to melt. Once melted, whisk in sugar and water until fully combined. Add chocolate chips and mint chocolate pieces and stir just until chocolate chips are melted, crushing some of the M&Ms or Andes gently with the bottom of your whisk. Remove from the heat and place in the bowl of a standing mixer. Allow to cool 10 minutes.
Once cooled, add eggs into chocolate mixture one at a time, beating well after each addition. Reduce speed on blender to low and gradually incorporate flour, baking soda and salt, stirring just until combined. Cover dough and refrigerate for 2 hours.
Preheat oven to 350ºF. Scoop dough into 1 to 2 tabelspoon-sized balls and place 2 inches apart on a baking sheet lined with parchment paper. Bake 9–11 minutes.
Cool on the baking sheet for 2 minutes before removing to a wire rack to cool. Store in an airtight container.
