Description

Oh so yummy chocolate cookie with melted marshmallow and chocolate frosting… This recipe is over 40 years old, and totally stands the test of time! Rich in chocolate, the marshmallow/frosting makes this cookie decadent!

Ingredients

  • FOR THE COOKIES:
  • ½ cups Shortening
  • 1 cup Sugar
  • 1 whole Egg
  • ½ cups Milk
  • ½ cups Baking Cocoa
  • 1-¾ cup Flour
  • ½ teaspoons Salt
  • ½ teaspoons Baking Soda
  • 1 teaspoon Vanilla Extract
  • ½ cups Walnuts, Chopped (optional)
  • 16 whole Large Marshmallows, Cut In Half

  • FOR THE FROSTING:
  • 1 container Prepared Chocolate Frosting (16 Ounce Tub)
  • ¼ cups Powdered Sugar
  • ½ teaspoons Vanilla Extract

Preparation

Preheat oven to 350 degrees F.

Cream together the shortening, sugar and egg. Add milk.
Combine the next 4 (dry) ingredients together, then stir into the shortening mixture. Add vanilla and nuts. Drop by teaspoon onto baking sheets lined with parchment paper (or grease the sheets if you don’t have the paper on hand). Bake for 9 minutes.

Remove from the oven, top each cookie with one of the marshmallow halves, and return to the oven for 3 minutes.

Cool on the cookie sheet for approximately 5 minutes.
Remove to a cooling rack. Frost the cookies while still warm.

(At this point in the cookie baking process you can prepare your own favorite chocolate frosting recipe, but I have to admit that I take a quick short cut…)

FROSTING

In a medium bowl combine the frosting, powdered sugar, and vanilla. Mix well and spread onto the cookies.

I made these today. I did not have time to make cookies, so I spread the dough in a greased 9X13 pan and baked 10 minutes. I topped it with mini marshmallows, then popped it back in the oven for 3 minutes more. I heated up my can of frosting so I could just pour it on top. They were a HIT!

I really liked these cookies, but my family was mixed (they are crazy). They were very messy to ice and I ended up not having enough icing (because I smeared so much on a lot of them so I wouldn’t have to touch the marshmallow top and make it all gooey). If you like marshmallow and their texture, this is the recipe for you!
