These cookies are known in Italy as “Baci di dama” (lady’s kisses). They are basically a shortbread with a chocolate filling.
Mix together hazelnuts, sugar, flour and butter.
Shape it into a ball, cover with plastic and let it rest in the refrigerator for 30 minutes.
Make little balls (the size of a hazelnut) and place them slightly apart on a baking sheet and refrigerate for another 30 minutes.
Bake at medium-low temperature (220-260F) for about 20 or 30 minutes. The temperature and the baking time vary depending on the oven. Let them cool completely on the baking sheet .
For the filling, melt the chocolate on a double boiler and use it to attach two cookies together.

i made these the other day, but i altered the recipe a bit…so i don’t think it’d be right of me to rate it! however, they turned out simply amazing, and i must thank you for the inspiration, yolandau) here are my modifications:
2/3 C almonds instead of 1 C hazelnuts (all i had!)
+1 egg and 1 tsp vanilla
+1/4 tsp baking powder
after chilling for 30 min, i flattened them slightly with the bottom of a glass, and i baked them right away (no more chilling) at 300 F for about 15 min. the cookies are very crunchy and oh-so delicious!! i made some into sandwiches using melted chocolate chips but left the rest plain because i like them both ways. i will for sure be making these again! perhaps with pecans and and crushed pretzels with white chocolate filling next time. thanks again!
