Taking a bite out of one of these cookies is like sinking your teeth into a deliciously, sinful chocolate covered cherry.
1. In a large bowl, mix the flour, cocoa, baking soda and salt. Set aside.
2. In a separate, larger bowl, cream the sugars and butter. After about 1-2 minutes, add the egg, vanilla and water. Mix to combine.
3. Add the dry ingredients to the wet and stir until incorporated.
4. Fold in the chopped cherries and white chocolate chips.
5. Refrigerate the dough for at least 1 hour.
6. Preheat oven to 375 F.
7. Scoop about 1″ round balls of dough onto an un-greased cookie sheet (note: dough will be sticky), spacing the cookies about 2 inches apart. Bake for 12 minutes. Remove from oven and set pan on a rack.
8. Let cookies cool on the pan for 2 minutes, then transfer to a wire rack. Store in an airtight container.
