love these – have made them at least twice, now. very wonderful.
The perfect fix for my chocolate addiction or for holiday cookie swaps.
Beat butter (1 cup plus 2 Tablespoons) at medium speed with an electric mixer until creamy. Add sugars, beat well. Then, add eggs and vanilla and continue to beat until well combined. Combine flour, baking soda and cocoa. Add to butter mixture and beat until well combined.
Use a cookie scoop or shape into balls and place on a lined or greased cookie sheet. Bake at 350 degrees (F) for 12 to 15 minutes. Remove to wire rack to cool.

I made these with whole wheat flour and peppermint extract. Yummy, they taste like thin mints! A great looking cookie too!
