A chewy cookie that hits the spot when it comes to dessert comfort foods. My favorite chocolate chips to use are the Ghirardelli bittersweet chocolate chips.
Preheat oven to 350 degrees (F). In one large bowl, cream butter (or shortening), brown, and white sugar. Add eggs and vanilla into the creamed mixture, stirring into the ingredients without over-beating it.
In a separate bowl, mix the flour, salt, baking soda, and cinnamon. Mix into the wet mixture a bit at a time, stirring until smooth.
Add in the oats, chocolate chips, and walnuts. Form rounded tablespoons of cookie dough, and place into oven for 9-10 minutes, or until the bottom of the cookie is golden brown.
