Description

This is what my family and friends are always asking me to make. There is no butter in these cookies, but don’t get freaked out. It’s the change in fat ingredient that guarantees that these cookies will stay soft for days!

Ingredients

  • 1 cup Vegetable Shortening (can Be Regular Or Butter Flavored)
  • 2 whole Eggs
  • 1 Tablespoon Vanilla
  • 1 cup Sugar
  • 1 cup Brown Sugar
  • 2-¼ cups Self-Rising Flour
  • 1 bag Chocolate Chips (12 Ounce Bag)

Preparation

1. Preheat oven to 350 degrees F.
2. Mix together shortening, eggs, vanilla, sugar, and brown sugar in a large mixing bowl.
3. Mix in flour gradually (about 1/2 cup at a time). Dough will be thick.
4. Mix in chocolate chips with a large spoon.
5. Use a cookie scoop or roll balls of dough a little over an inch thick in diameter and place on a greased cookie sheet. You’ll need at least two sheets for my baking method.
6. Each oven is different, but I bake mine for 11 minutes. You want the cookies to be SLIGHTLY brown on the edges. Don’t over bake these, my friends, or you will end up with hockey pucks. These cookies won’t brown all over like other cookies because there is no butter.
7. Remove cookies from the oven and let the cookies “set” on the sheet for at least 7 minutes. When you pull them out of oven, if you try to scoop them off the cookie sheet right away, they squish up. So leave them alone!

These make at least 3 dozen if not more.
