A simple adaptation of an old favourite.
A simple, simple chocolate chip cookie recipe, great for doubling or tripling if you’re REALLY hungry (or your husband’s friends are coming over). Change the recipe to whatever suits your tastes, include walnuts or peanuts, or substitute butterscotch or peanut butter chips for a different taste!
Preheat oven 375F.
Set up your mixer (either hand or stand). On medium speed, cream the butter and both sugars until light and fluffy. Add and mix in the eggs, salt and vanilla.
Whisk the flour and baking soda together, then beat into your mixture.
Throw in a good handful of chocolate chips. You don’t want to use TOO many (or maybe you do :D). Chop up the baking squares (either one or two) and throw those in, too. Mix entire mixture gently until chocolate is dispersed.
Drop heaping teaspoonfuls of mixture onto a baking sheet. They will spread out in the oven.
Bake for 8 to 10 minutes until golden brown.
