Description

A classic. Simple, sweet and open to a million variations.

Ingredients

  • ⅓ cups Shortening
  • ⅓ cups White Sugar
  • ⅓ cups Brown Sugar
  • 1 whole Egg, Beaten
  • ½ teaspoons Vanilla
  • ½ teaspoons Baking Soda
  • 1 teaspoon Hot Water
  • 1 cup Pastry Flour
  • ½ teaspoons Salt
  • 1 cup Chocolate Chips (or To Taste)
  • ½ cups Chopped Nuts (optional)

Preparation

Cream together shortening and sugars. Add egg and vanilla. Dissolve soda in hot water and add to the mixture.

Mix together flour and salt in a separate bowl. Slowly pour flour mixture into the shortening/sugar mixture. Add as many chocolate chips as you would like. Chopped nuts also work lovely in here.

Bake at 350ºF for 12–15 minutes or until just golden around the edges.

A nice simple recipe that quickly makes a batch of cookies. I’m not usually a fan of shortening in my chocolate chip cookie batter but this created a light texture that only added to the chewiness of the baked cookie. I think perhaps some more brown sugar or additional vanilla could be used as the dough has a very mild flavor. I baked my small mounds of dough for eight minutes and let them cool two to three minutes before removing from the baking sheet. Perfect. Yep, add-ins would only amp this up to even greater flavor, toffee bits perhaps?
