Description

Deliciously decadent chocolate chip cookies with a homemade dark chocolate peanut butter cup in the middle.

Ingredients

  • 1 cup Margarine
  • 1-¼ cup Superfine Sugar
  • 2 whole Eggs
  • ½ Tablespoons Honey
  • 1 teaspoon Vanilla
  • 2-½ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 12 ounces, weight Chocolate Chips
  • 4 whole Dark Chocolate Peanut Butter Cups, Quartered

Preparation

Preheat oven to 350ºF.

Cream margarine and sugar together. Mix in eggs, honey and vanilla.

Add flour and baking powder. Mix until just combined.

Gently stir in chocolate chips

Place dough, covered, in the freezer for 15 minutes.

Spoon 16 balls of dough onto a nonstick (or greased) baking sheet. Gently flatten each with the back of a spoon.

Place a piece of a peanut butter cup (see note below) on top of each flatten cookie dough ball. Spoon another scoop of cookie dough batter over each.

Carefully press the edges of the cookie together to form a sphere around the peanut butter cup.

Bake for 18 minutes.

Allow to cool slightly before eating.

Note: See my blog for the recipe I use for homemade peanut butter cups. Feel free to use store-bought if you want, they’ll still be amazing!
