Description

These soft and chewy Chocolate Chip Cookie Cups are packed with chocolate chips and topped with delicious chocolate frosting for a super chocolaty treat.

Ingredients

  • FOR THE COOKIES:
  • 2 sticks Unsalted Butter
  • ⅔ cups Brown Sugar
  • ½ cups Granulated Sugar
  • 2  Eggs
  • 1 teaspoon Vanilla Extract
  • 2-⅓ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Salt
  • 2 cups Semi-Sweet Chocolate Chips
  • FOR THE FROSTING:
  • 2 sticks Butter
  • 4 cups Confectioners Sugar
  • 1 cup Cocoa Powder
  • 6 Tablespoons Milk
  • 2 teaspoons Vanilla Extract

Preparation

Preheat oven to 375ºF. Grease 16 muffin pan cups (I used butter).

Using a spoon, mix together butter, brown sugar, granulated sugar, eggs and vanilla in a large bowl until well combined, but do not over-mix.

In another bowl, combine flour, baking soda, and salt. Use a spoon to mix into butter mixture, avoiding over-mixing. Fold in chocolate chips until evenly distributed throughout dough.

Fill each greased muffin cup with dough until all dough is used. Bake for 12–14 minutes until tops have set and muffins are golden in color.

Transfer pan to a hot plate or place on top of a cooling rack and let stand for 10–15 minutes, as cookie cups will continue to set while they cool.

Make frosting while cookie cups are cooling. Start by using a hand mixer to beat butter until creamy. Add confectioners sugar, cocoa powder, milk and vanilla and beat again.

Ice cookie cups with chocolate frosting once they have cooled.
