Thick, chewy and delicious!

Ingredients

  • FOR THE COOKIE CRUST:
  • 1 cup Biscoff Cookie Crumbs (about 12 Cookies)
  • 2 Tablespoons Butter, Melted
  • FOR THE TOP LAYER:
  • 5 Tablespoons Unsalted Butter, Softened
  • ½ cups Sugar
  • 2  Large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 cup Biscoff Spread
  • 1 cup All-purpose Flour
  • ¼ teaspoons Salt
  • ½ teaspoons Baking Powder
  • ½ cups Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 350ºF. Spray an 8″x8″ baking pan with nonstick cooking spray.

For the cookie crust, in a small bowl combine cookie crumbs and melted butter and stir until butter is blended with crumbs. Evenly spread crumbs on the bottom of baking pan pressing firmly. Bake in the preheated oven for 5-7 minutes just until set. Remove from oven and cool slightly.

Meanwhile in a large bowl cream together softened unsalted butter and sugar using an electric mixer or by hand. Beat in eggs, followed by vanilla and Biscoff Spread until mixture is creamy. Stir in flour, salt and baking powder until all combined. Fold in chocolate chips. Spread mixture on top of cookie crust.

Bake on the center rack for 33-37 minutes until cake tester comes out clean. Cool completely on a wire rack.
