One of my favorite recipes. A great cheesecake for beginners to make.
Heat oven to 350ºF. For the crust, mix crumbs and sugar; mix in melted butter or margarine thoroughly. Press evenly on bottom of ungreased 9×3 springform pan. (A 9-inch glass pie pan will work too if you don’t have a springform pan.) Bake 10 minutes; cool.
Reduce oven temperature to 300ºF. For the filling, beat cream cheese in a 3-quart bowl. Gradually beat in sugar and cocoa until fluffy; add vanilla. Beat in eggs, one at a time. Pour over crumb mixture. Bake until center is firm, about 1 hour. Cover and refrigerate at least 3 hours but no more than 48 hours.
Eat plain or top with sour cream topping or fresh strawberries.
