Found this in the SE Missourian. Everyone goes gaga over them. I think they are a pain to make, but they must be good because I still make them for people to go gaga over.
Preheat oven to 350
Cookie:
Cream thoroughly first 4 ingredients. Slowly add in 2 cups flour. Shape dough into balls, place on ungreased cookie sheet, and press a hole in center of each with finger.
Put cookies 2” apart. Bake at 350 degrees for 12-15 minutes until delicately browned on edges. Let cool.
While cookies are baking make filling.
Filling:
In new bowl, mix together next 6 ingredients, Once cookies are cool, place chilled filling on cookies
Frosting:
Melt together chocolate chips, water and 2 tbsp. butter over low heat. Remove from heat and add 1/2 cup powdered sugar. Beat till smooth. Let cookies cool before frosting.
Keep cookies in a cool place, we only make these in the winter time.
I found this note with the recipe, that my grandma wrote to share with the recipe. I think it is both inspiring and a nice tribute to my grandpa who just passed. He helped with a lot more than jars and chopping, but made her feel like she wasn’t disabled by the stroke. She could still make her “special cookies.”
“I make lots of cookies and I give them as gifts for Christmas, My daughter and I have a cookie swap every year. I bake all my cookies with my left hand. I had stroke May 4, l998 that left my right hand and right leg paralyzed. My husband helps with the chopping nuts and opening jars.”

At the end you pretty much have a shortbread cookie with a cream cheese dollop on them and then cover in chocolate.

These sound really intriguing from the ingredients, but it seems there must be some missing instruction. Is the filling boiled and the nuts and coconut added then put in the wells in the cookies? Then are they frosted?
