Description

Healthy and wholesome chocolate animal crackers! These will be perfect “hidden” inside my daughter’s Easter eggs!

Ingredients

  • ½ cups Oats, Blended Until Smooth
  • ¼ cups Unsweetened Cocoa Powder
  • ¾ cups Whole Wheat Pastry Flour
  • ¼ teaspoons Baking Soda
  • 6 Tablespoons Honey Or Agave
  • ½ teaspoons Vanilla Extract
  • 4 Tablespoons Buttermilk
  • ¼ cups Butter, Softened

Preparation

Combine all ingredients until a stiff dough has formed. Cover with plastic wrap and chill for 1 hour. Roll the chilled dough on a floured surface and cut with little animal cookie cutters. Bake on a cookie sheet in a 350ºF preheated oven for approximately 7–10 minutes. The cooking time will vary based on the size of the cookies. Remove the cookies from the pan and cool on a cooling rack. These little cookies are going to fill my little girl’s Easter eggs, and I can’t wait for her to discover these during her first Easter egg hunt!

These look delicious. I wonder if they would work with rice milk and dairy free butter? My son is allergic to dairy and eggs. Just curious if you have ever tried it.

Might add these to my recipe testing list for him. Thanks!
