Description

This is my recipe of an adaptation of the Neiman Marcus cookie. It has more chocolate and a couple other changes. This recipe won 2nd place in the “granny’s kitchen” baking contest at the local county fair a couple years ago.
It is chocolate heaven!

Ingredients

  • 5 cups Oatmeal, Blended (quick Or Regular)
  • 3 cups Pecans, Chopped
  • 4 ounces, weight Milk Chocolate Bar (I Use Hershey's)
  • 8 ounces, weight Good Quality Milk Chocolate
  • 2 cups Butter
  • 2 cups Granulated Sugar
  • 2 cups Brown Sugar
  • 4 whole Eggs
  • 1 Tablespoon Vanilla
  • 2 teaspoons Baking Soda
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 3-½ cups All-purpose Flour
  • 1 cup Cocoa Powder
  • 24 ounces, weight Semi-Sweet Chocolate Chips

Preparation

Preheat oven to 375 degrees F.

Measure 5 cups oatmeal into blender or food processor and blend to a fine powder. (This works best when you do half at a time). Move oats to a bowl and chop the pecans next (as fine or coarse as you want, I like fine).
Coarsely chop the good quality chocolate to make chunks. Finely chop or grate the chocolate bar. You can use anywhere from 4-6 ounces.

In a mixing bowl, cream together the butter and sugars.
Add eggs and vanilla. Next, blend in the baking soda, baking powder and salt. Add in the flour, cocoa powder and blended oatmeal. Stir in the chocolate and nuts (this is best done by hand so the mixer doesn’t break it all up. Move dough to a larger bowl if necessary).

Drop dough onto cookie sheets about 2 inches apart. Bake at 375° for 10 minutes. Let cookies sit on pan for 1 minute before removing to cooling rack to cool.

Makes 9 dozen (recipe can be cut in half)
