Mini M&Ms give this oatmeal cookie recipe sweet crunch that’s a break from the traditional oatmeal raisin cookie.
Preheat the oven to 375°F.
In a large bowl using an electric mixer, beat together the butter and sugars until fluffy. Add the egg and vanilla extract and mix to incorporate. Next add the flour, oats, salt and baking soda and mix well. Stir in the mini M&Ms by hand.
Drop the batter by tablespoon-sized scoops onto non-stick baking sheets spacing them an inch or two apart. Bake for nine minutes. Remove from the oven and let them cool for a minute on the pans before removing them to a cooling rack.
Makes 30 cookies.
