These cookes are highly addictive and best served with a huge glass of cold milk.
Preheat oven to 350 F.
In a large bowl mix together the brown sugar and softened butter. Add the egg and vanilla and mix until creamy. Stir in the oats, flour, baking soda, salt and once fully combined then mix in the chocolate chips.
Drop by rounded tablespoons onto un-greased cookie sheets. Bake 12 to 14 minutes until just browned. Remove pan from oven and set on a rack. Cool cookies on the baking sheet for a few minutes and then transfer to cooling racks until ready to eat.
