At a holiday party at work last week, I was in line for a quick treat. Behold, the white chocolate chip cookie. But this was unlike anything I had ever had. I inquired as to the contents of said cookie, only to be pleasantly informed that they were white chocolate and cherry. Cherry? Heaven!
Preheat oven to 375ºF.
Mix all of the dry ingredients into a sifter/strainer over a small bowl (flour, baking powder, baking soda and salt) and sift into the bowl.
In a large bowl, add the butter, brown sugar, granulated sugar and vanilla extract and beat until creamy. Beat in the egg. Gradually add the dry ingredients to the creamy mixture using a wooden spoon. Add the white chocolate chips, dried cherries/Craisins, and almonds and mix well.
Spoon rounded tablespoon-sized balls onto an ungreased cookie sheet, 1 inch or so apart. Place in the oven for 9 to 11 minutes, or until cookies start to brown around the edges. Remove from oven and let cool for 2 minutes on the cookie sheet. Then remove to a wire cooling rack to finish cooling.
