This cheesecake was part of our Thanksgiving Eating Extravaganza.
Combine the crust ingredients and press into the bottom and up the sides of a 10″ springform pan.
To make the cheesecake, beat egg whites until stiff, adding 1/2 cup sugar. Set aside.
Blend flour, cream cheese, pinch of salt, and remaining sugar. Add egg yolks. Blend and add sour cream and vanilla. Fold in egg whites.
Pour into graham cracker crust. Bake at 300˚ for 1 1/2 hours. Turn off oven and leave the cheesecake in the oven for 1 hour more.
Cool completely before cutting.
