These cookies are a perfect healthy snack for a fall day.
In a medium bowl combine flour, oats, flax, cinnamon, baking soda and salt. In a large bowl, beat together the egg, coconut oil, applesauce, maple syrup and vanilla. Fold in flour mixture. Then stir in the carrots and dates. Drop by heaping tablespoonfuls, 2 inches apart, onto a cookie sheet. Bake at 350F for 10-15 minutes until the bottoms are lighlty browned.
