I enjoy making flapjacks as a breakfast treat with some dairy-free yoghurt and fruit. The cardamom gives these gluten-free flapjacks a really warm, interesting flavour—if you don’t have any, you can replace with cinnamon or ginger.
Preheat oven to 180ºC (355ºF),
Place dairy-free spread, sugar and honey in a saucepan on a medium heat until melted and well-combined. Stir in oats, cardamom, cinnamon and raisins.
Press into a lined 6 x 6 tin. Bake for 20 minutes. Remove from oven but leave in the tin and allow to cool.

Flapjacks? In the USofA, flapjacks is another name for pancakes.
