These little sandwich cookies are a delight to put together and have such a rich, buttery flavor.
Preheat oven to 325°F. In a large bowl using an electric mixer, cream the sugar and butter. Add the egg yolk and flour and mix to make a stiff dough. Shape into balls and place the balls onto a parchment paper lined baking tray about 2 inches apart. Use your hand or the bottom of a cup and flatten them a bit then bake at 325°F for 12 minutes.
For the icing: Melt the butter in a saucepan over medium heat until it starts to turn a light golden brown and smell a bit nutty. Remove from heat and add the powdered sugar, vanilla and cream. Whisk until all lumps are gone and icing is smooth. More powdered sugar can be added to make a thicker icing.
Make sandwich cookies by spreading icing between two cookies. I like to make them small and dainty!
