Description

How to make candied lemon slices.

Ingredients

  • 1 whole Lemon Thinly Sliced
  • 3 cups Water, Divided
  • 1-½ cup Granulated Sugar

Preparation

Start by thinly slicing lemon into slices about 1/8-inch thick. Blanch the lemon slices in 2 cups of boiling water for 5 minutes; drain.

Heat 1 cup of water and sugar together; stirring until sugar is dissolved. Add blanched lemon slices and bring to a boil; reduce heat and simmer for 1 hour. Remove from heat. spray a cooling rack with non-stick spray. Place candied lemon slices on the rack in a single layer to dry for up to 24 hours.

Can be stored in an airtight container between pieces of waxed paper. Use to garnish a variety of drinks and desserts. For larger batches, increase recipe as needed.

Hi!
We have two Meyer lemon trees in our backyard. In fact, we just picked two 5 gallon buckets of those luscious beauties! My question is: “Have you ever candied more than one lemon at a time?” I need directions on how to increase the ingredients if you have. Thanks! And now I’m off to try my first candied lemon. :)
