These chewy, buttery, chocolaty cookies are perfect for the kids, friends, coworkers or to eat all by yourself. You are going to be amazed at how fast these morsels disappear.
Cream butter and sugar together in the bowl of a stand mixer fitted with the paddle attachment. Add eggs, one at a time, beating after each addition and then continue beating until mixture is light and fluffy. Add vanilla.
In a separate bowl, combine flour, cocoa, baking soda, and salt. Slowly add dry mixture to butter mixture, beating only until just combined. Drop by tablespoonfuls onto an ungreased baking sheet, leaving about 2 inches between cookies.
Bake for 9–10 minutes at 350ºF. Keep a close eye on them, and when they appear to be firming up a bit and cracks start to form on top, they are ready. Transfer to wire racks to cool.
