Description

Just the right mix of sweet and salty, a bit of crunch, and lots of apples slathered in cinnamon and butter makes this the perfect fall dessert!

Ingredients

  • FOR THE CANDIED WALNUTS:
  • 100 grams Walnuts, Roughly Chopped
  • 2 Tablespoons Brown Sugar
  • 2 Tablespoons White Sugar
  • 2 Tablespoons Water
  • ¾ teaspoons Salt
  • A Pinch Of Cayenne Pepper
  • FOR THE APPLES:
  • 4 Tablespoons Salted Butter
  • 4  Apples, Preferably Tart, Peeled And Cut In Bite-size Pieces
  • 1 teaspoon Ground Cinnamon
  • ½ liters Good Quality Vanilla Ice Cream, To Serve

Preparation

For the candied walnuts:
Place a baking sheet on a heat resistant surface, such as an oven tray.

Heat a pan over medium high heat and place walnuts in pan. Roast for 3–5 minutes, stirring often to prevent walnuts from burning. Set aside.

In a bowl, mix brown sugar, white sugar, water, salt and cayenne pepper. Pour in a cold pan and place over medium heat. Bring to a boil and simmer for 3–5 minutes, until golden brown, making sure sugars don’t burn . Do not stir—if it browns unevenly, tip the pan a bit to mix.

Add walnuts and mix. Pour them onto the baking sheet. Leave to cool until ready to serve.

For the cinnamon apples:
Melt butter in a pan over medium-high heat. Add apples and cook for 3–5 minutes.

Add cinnamon and cook for another minute. Serve immediately. To serve, scoop vanilla ice cream on to a plate or into a bowl. Place buttered cinnamon apples on top and sprinkle over the salty candied walnuts. Enjoy!
