Quick to make, delicious to eat!
Cream together the butter and sugar until light and fluffy.
Stir in flour, rolled oats and extract until well blended.
Drop by rounded teaspoonfuls 2 inches apart on a greased cookie sheet. Butter the bottom of a wide, flat-bottomed glass, dip it in sugar and press the cookie dough flat. Bake at 375 degrees until lightly browned around the edges, about 8 – 10 minutes. Cool slightly on the cookie sheet, then transfer to racks. Dust with powdered sugar.
This makes about 24 cookies.
Note: this is a good beginner recipe to teach your children or grandchildren how to bake!
