Minty, buttery goodness in a little round cookie. Use different colored sugars for specific holidays. These are so easy!
Preheat oven to 350ºF.
In a large bowl, cream butter and sugar together until light and fluffy. Beat in peppermint extract. Gradually add flour and mix well.
Roll level tablespoonfuls of dough into balls. Place 1 inch apart on baking sheets. Flatten with a glass dipped in colored sugar.
Bake for 12–14 minutes or until firm. Remove to wire racks to cool.
