Description

Moist brownies wrapped into a cookie … using only one dough. These cookies are as easy as they get!

Ingredients

  • ½ pounds, ⅞ ounces, weight Flour
  • 1 teaspoon Baking Powder
  • ⅛ teaspoons Sea Salt
  • 4-¼ ounces, weight Butter
  • 5-⅓ ounces, weight Sugar
  • 1-⅞ ounces, weight Brown Sugar
  • 1 whole Egg
  • 1 Tablespoon Light Molasses
  • 1 teaspoon Vanilla Extract
  • ¾ ounces, weight Cocoa Powder
  • ⅝ ounces, weight Toasted Coconut (optional)

Preparation

1. Preheat oven to 175°C (350°F) and line two baking sheets with parchment paper.
2. Whisk together flour, baking powder and salt.
3. Cream butter and both sugars.
4. Mix in the egg, molasses and vanilla extract.
5. Gently fold in the flour mixture until barely combined.
6. Divide 200g of dough into a small bowl and mix in the cocoa powder until combined.
7. Roll both the light and the dark dough into 12 balls each.
8. Coat the dark balls with toasted coconut and wrap the light dough around them.
9. Bake for 15-16 minutes until slightly golden around the edges.
10. Cool on baking sheets for 5 minutes and transfer to cooling racks to cool completely.
