Soft, fluffy and healthy cookies. Forget about blueberry pancakes or muffins, turn it into a cookie.
Preheat your oven to 375°F. Line a cookie sheet with parchment paper and set it aside.
In a large bowl mix together flour, sugar, baking powder and baking soda. Add yogurt, egg, oil and lemon juice and mix until well combined. Fold in the blueberries. Make sure that you don’t over-mix or your whole dough will be blue.
Place scoops of dough onto the cookie sheet using a tablespoon. Bake for 15-18 minutes. When done remove the sheet from the oven and transfer cookies onto a cooling rack.
