Description

A different variety of cookie that is completely addicting.

Ingredients

  • ½ cups Butter
  • 1 cup Packed Brown Sugar
  • ½ cups Nonfat Vanilla Greek Yogurt
  • 1 whole Egg
  • 1-½ teaspoon Vanilla
  • 2-¼ cups White Whole Wheat Flour
  • 1 teaspoon Sea Salt
  • 1 teaspoon Baking Soda
  • ¾ cups Blueberries, Fresh Or Frozen
  • ¾ cups White Chocolate Chips

Preparation

Preheat oven to 375 F.

In a saucepan melt butter over low heat. Once melted butter will begin to foam and crackle. Watch it closely for the next 3-5 minutes as you continue to heat it. Butter will turn a dark brown color. Once this color change happens remove pan from heat and stir until butter darkens a little more.

Immediately pour butter into a mixing bowl. Add sugar and yogurt. Cream mixture until combined. Add the egg and vanilla. Mix well then set aside.

In a bowl combine flour, salt and baking soda.

Add dry ingredients into the wet mixture. Mix well.

Fold in white chocolate and blueberries. Be careful as you mix the blueberries into the batter and not let them burst. Or else you’re going to have scary blue cookies, like mine.

Drop the dough by tablespoonfuls onto a Silpat- or parchment paper-lined baking sheet.

Bake for 12-15 minutes until set. Enjoy!
