Soft, chewy cookies with milk, dark and white chocolate and lots of rainbow sprinkles. They make any day feel like a celebration!
1. Preheat oven to 375 F.
2. Cream butter and both sugars in a large mixing bowl. Add egg and egg yolk and mix well. Add vanilla extract and mix to combine.
3. In a separate bowl, mix kosher salt, baking soda, and both flours. Add this into the egg/butter/sugar/vanilla mixture and stir until just combined. Stir in the white, milk, and dark chocolate chips/chunks until well-mixed. Stir in the sprinkles until they have just evenly distributed.
4. Scoop dough into 1/4 cup sized balls and roll gently between your palms until smooth, being careful not to compress dough too much. Set them onto parchment-lined baking sheets, leaving about 2 inches in between, for roughly 15-17 minutes or until edges and crispy and center is set. Then remove pans from the oven and set on a wire rack. Let cookies sit on the pans for 5 minutes then move to cooling rack. Allow to cool entirely before enjoying.
Notes:
– For all kinds of chocolate in this recipe, you can swap chips for chunks and vice versa. I found this combination was what I had readily available and, also, I do like to use some chunks, since they create those nice layers in the final product.
– I would not recommend crunchy sprinkles, such as nonpareils, for this recipe. The waxy-like long sprinkles contribute to the “party” feel.
