A little bit of everything that makes a cookie irresistible. Don’t let the long ingredient list scare you off – Bear Paws are super easy and SUPER worth it!
Preheat oven to 350°. In a large bowl, cream together butter, shortening, and sugars. Add peanut butter, eggs and vanilla; beat just until incorporated. Add salt, soda, ground flax, oat flour, and oats; beat until incorporated. Add whole wheat and all-purpose flour to make a fairly firm dough (but not too dry). Stir in pecans, chocolate, and butterscotch chips. Use a large cookie scoop or drop by tablespoonfuls onto cookie sheets or a baking stone. Bake at 350° for 11 minutes, or until just beginning to brown.

These cookies are amazing! I sold them at a bake sale and one woman said they were the best cookies she’s ever eaten. It’s so quick and easy to make these and takes variations quite well. I didn’t have whole wheat flour so I used amaranth flour in place of it (go figure why i hat *that!*); had no pecans but walnuts worked great, and I didn’t have butterscotch chips so I just used more choc chips. My kids wolfed down two each as soon as they came out of the oven. I felt fine letting them since it had such healthy ingredients (I consider chocolate a health food but I also mean the oatmeal, ground flax seeds, etc.) This is going to be a standard in our house for sure.

Oops – made a mistake in the amount of all-purpose flour. Should have been 2 cups, not 1 1/2. Corrected now; sorry for the typo!
