A sweet, healthy, gluten-free peanut butter cookie with little chunks of chocolate and made with chickpeas.
Preheat oven to 350ºF. Line 2 baking sheets with parchment paper or Silpat.
In a blender add all of your ingredients except for the chocolate chips and process until smooth. Scoop the batter into a bowl and stir in chocolate chips.
Scoop about a tablespoonful of dough and place on prepared baking sheet. Do the same with the rest of the dough.
Bake for 10-13 minutes or until slightly golden. Leave on baking sheet for 2 minutes and transfer to a baking rack to cool.
