In a mixing bowl using an electric mixer, combine butter, sugar and salt on medium speed until combined and fluffy. Add the egg. Beat until egg is fully incorporated. Occasionally scrape the sides of the bowl. Mix in vanilla. Add flour while reducing the mixer speed to low. Combine thoroughly.
You can either refrigerate dough in log form or you can start baking immediately after mixing.
Preheat oven to 350 F.
Roll out the dough on a floured surface, until you have your desired cookie thickness. Cut into desired shapes. It is a good idea to refrigerate the cut out shapes for 10-15 minutes before baking. They hold their shape better in the oven if you do!
Bake cookies on parchment paper-lined cookie sheets for 8-10 minutes or until firm. You do not want them to be golden of any shade! They will look sloppy once you ice them. The lighter the cookie, the better. Remove from oven once done. Let cookies sit for a bit before moving them to a cool surface to finish cooling. Frost once totally cooled. Enjoy!
