Description

A most requested recipe, especially in the summer for picnics. But it’s not bad during the winter either.

Ingredients

  • 2 cups Graham Cracker Crumbs
  • 1 cup Chopped Walnuts
  • 8 Tablespoons Melted Butter
  • ½ cups Sugar (or Less)
  • 1 cup Softened Butter
  • 2 cups Confectioners Sugar
  • 2 whole Eggs
  • 4 whole Bananas, Sliced
  • 1 quart Sliced Strawberries
  • 1 can 20 Oz Crushed Pineapple (make Sure It's Well Drained)
  • 1 container 8 Oz. Cool Whip
  • 1 cup Shredded Coconut
  • 1 cup Chopped Walnuts
  • ½ cups Sliced Cherries (in Jar)

Preparation

First layer:
Combine graham cracker crumbs, 1 cup walnuts, the melted butter, and 1/2 cup sugar in a mixing bowl. Then press the mixture into the bottom of a 9 x 13 baking dish.

Second layer:
Beat together 1 cup (2 sticks) of softened butter, confectioner’s sugar and eggs for a FULL 15 minutes at medium high speed using your stand mixer. When done, spread this over the crumb mixture in the pan.

Third layer:
Spread sliced bananas over the top of the second layer.

Fourth layer:
Spread sliced strawberries over the top of the bananas. Then top the berries with the drained crushed pineapple.

Fifth layer:
Spread Cool Whip over the top of the pineapple.

Then sprinkle coconut and chopped walnuts over the top. Decorate with sliced cherries. (Note: you may not need the full 1 cup of coconut).

Refrigerate for at least 6 hours (overnight is best) to chill and set.

Cut into squares and serve. Now watch it disappear!!
