Simple, chocolate-covered peanut butter and walnuts.
1. Chop your walnuts as finely or as coarsely as you like.
2. Mix sugar, butter, peanut butter, walnuts and vanilla in an electric mixer.
3. Refrigerate for at the very least an hour. You want the mixture to be firm.
4. Melt your dark chocolate chips and Parowax in a double boiler, so as not to scald the chocolate.
5. When your nutty mixture is hard, roll into walnut-sized balls.
6. Dip the balls in the chocolate, place on a tray/plate lined with waxed paper and put back in the refrigerator.
Note: it’s also wonderful to change the nut choice up a bit, add a white chocolate dip, or add some Grand Marnier or Kahlua to your chocolate. Enjoy!
