These healthy cookies are made with whole wheat flour, but the applesauce keeps them feeling light. The cinnamon chips add the perfect surprise of sweetness.
Preheat oven to 350°F.
Cream together shortening and brown sugar. Beat in egg and vanilla. Add applesauce.
Sift together dry ingredients. Stir into applesauce mixture. If desired, add chopped nuts or raisins.
Drop by teaspoonfuls onto greased cookie sheets. Bake at 350°F for 10 to 15 minutes. Cool for 1 minute before removing to cooling racks.
