Description

This is the cake my husband always requests for his birthday. It can be made with either 4 egg whites or 2 whole eggs.

Ingredients

  • 2 cups Unbleached All-purpose Flour
  • 2 teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • 2 teaspoons Ground Cinnamon
  • ½ teaspoons Ground Ginger
  • 1 teaspoon Ground Nutmeg
  • ¼ teaspoons Ground Allspice
  • 1 cup Unsalted Butter, Softened
  • 1 cup Light Brown Sugar
  • 2 whole Eggs
  • 1-½ cup Unsweetened Applesauce
  • 1 teaspoon Vanilla Extract
  • Powdered Sugar For Dusting (optional)

Preparation

Preheat the oven to 350F and grease a 9″ round cake pan.

Whisk the flour, baking powder, baking soda, salt and spices together in a medium mixing bowl. Set aside.

In a stand mixer fitted with the paddle attachment or using an electric hand mixer, beat the butter until light and fluffy. Add the brown sugar and beat until all the sugar is incorporated into the butter.

Beat in the eggs or egg whites, one at a time.

Mix in half of the flour mixture, then beat in the applesauce and vanilla. Add the rest of the flour and mix just until there are no dry spots left in the batter.

Transfer the batter to the prepared pan, and use a spatula or knife to smooth out the top.

Bake at 350F for 45-50 minutes, or until a knife inserted into the center of the cake comes out clean.

Allow the cake to cool for 10-15 minutes before running a knife around the edges and turning the cake out onto a wire rack. Carefully reinvert the cake so that is upright on the wire rack, and allow to cool completely. Dust with powdered sugar just before serving (optional).
