Description

I saw something similar to these cupcakes on TV one day. I knew I’d probably never make it to the bakery that sells them, so I decided to make them myself.

Ingredients

  • 2 whole Granny Smith Apples
  • ½ cups Light Brown Sugar
  • ½ cups White Granulated Sugar
  • 1 teaspoon Nutmeg
  • 1 teaspoon Cinnamon
  • 1 Tablespoon Butter
  • 1 box (18.25 Oz. Box) Yellow Cake Mix
  • 1-⅓ cup Water
  • 3 whole Eggs
  • ½ cups Vegetable Oil

Preparation

The amount of cinnamon and sugar in this recipe can be adjusted to taste.

Preheat oven to 350 degrees F.

Peel, core and dice apples. Spread in a single layer on a lined cookie sheet.

Sprinkle brown sugar, white sugar, nutmeg and cinnamon over apples.

Bake in the preheated oven for 20 minutes or until apples are cooked.

Remove pan from oven and immediately dump apples and any drippings into a heat resistant bowl.

Stir in butter until melted. Set apple mixture to the side to cool.

In a large mixing bowl, beat cake mix, water, eggs and oil together until blended.

Optional step: Pour apple mixture onto a cutting board or mat, dice (or mash, depending on the texture you want) into tiny pieces.

Mix apples into cake batter.

Scoop batter into cupcake pans (I use an ice cream scoop).

Bake at 350 degrees F for 18 minutes. Test cupcakes by inserting a toothpick in the middle. If toothpick comes out clean, remove cupcakes from the oven. If not, bake for 3-5 more minutes.

Let cupcakes cool.

Frost with your favorite frosting.

Serve.

Yum.

I made these the other day for my father’s birthday (apple pie is his favorite:) ) They were a hit! I used cream cheese frosting w/ cinnamon and sugar sprinkled lightly on top. Very yummy! Thanks for sharing!

Absolutely wonderful! I made this for my son’s first birthday and they were a hit! Frosted with store-bought cream cheese frosting and it tasted just about perfect!

Made these for a church potluck. Very yummy! I used cream cheese icing and sprinkled some toasted pecans and cinnamon on top. Thanks!

Made these this past weekend and they were a huge hit! Also made the homemade vanilla bean buttercream frosting which was the perfect finishing touch…..YUM! Had lots of requests for the recipe. Thanks for sharing this one! :)

I made these for my 4th of July party and they are incredible! They take a couple hours after baking to truly set, otherwise it’s a bit of a struggle to eat one and not look like a mess. But they’re a huge hit and my friends are telling me that they’re amazing, so I’ll definitely be making them again!

P.S. This should go without saying, but I think because I grated the cinnamon and nutmeg myself it made the flavor pop even more! Also, buttercream frosting is the perfect complement to the tangy apple and nutmeg.

Lord have mercy! These are so good, they are evil. Followed the recipe exactly, including butter cream frosting purchased at the store. Makes lots of cupcakes for a crowd. I got 46 from the recipe.

Made these for my Sunday School class and they were a big hit! The only change I made from the original recipe was the frosting. I used cream cheese frosting. I wanted to try the frosting you mentioned (see comments) but vanilla bean paste can’t be found locally. I see a trip to Houston in my future. Thanks for sharing your recipe!
